Dream of being part of an exciting hotel opening in the heart of Copenhagen?
Locke Copenhagen is set to open in early March 2026 and will be a key destination within the city’s vibrant new district, Postbyen. Located between Copenhagen Central Station and Kalvebod Brygge, the hotel will feature 234 stylish rooms across two iconic round towers, rising up to 70 metres high. Guests will enjoy a signature restaurant, a buzzing cocktail bar, and a rooftop bar with panoramic 360-degree views over the city and waterfront.
We are now looking for an experienced Sous Chef to join our opening kitchen team.
The Role
As Sous Chef, you will play a central role in supporting the Head Chef and helping bring the Locke food concept to life. You are a hands-on leader who thrives in a fast-paced environment, stays calm under pressure, and sets high standards through example.
Reporting to the Head Chef and F&B Manager, you will help manage daily kitchen operations, support team development, and ensure consistent quality across all services. You will be instrumental in establishing systems, standards, and culture during this exciting opening phase.
Key Responsibilities
Kitchen Operations & Service
Support the Head Chef in overseeing day-to-day kitchen operations
Lead services in the Head Chef’s absence, ensuring smooth and efficient execution
Maintain high standards of food quality, presentation, and consistency
Food Preparation & Quality Control
Prepare and cook dishes to brand recipes and standards
Monitor quality and consistency across all sections
Assist in menu development, tastings, and seasonal updates
Team Leadership & Training
Support the training, onboarding, and development of junior chefs
Lead by example and promote a positive, professional kitchen culture
Assist with rota planning and daily task allocation
Organisation & Standards
Ensure the kitchen is clean, organised, and operationally efficient at all times
Uphold food safety, hygiene, and health & safety standards
Assist with stock control, ordering, and waste management
You’ll Succeed in This Role If You Have
Proven experience as a Sous Chef or strong Senior Chef de Partie ready to step up
Experience in hotels, high-quality restaurants, or busy café concepts
Strong organisational skills and the ability to manage service under pressure
Solid knowledge of food safety, hygiene, and kitchen compliance
A collaborative mindset and natural leadership ability
Culinary qualifications are an advantage
